Vegan Oatcakes

1.5 cup spelt flour
1 tsp salt
1/2 tsp baking soda
1/3 cup sugar
1.5 cup scotch oatmeal (steel cut)
3/4 cup vegan margarine
5 tbsp cold water

a) into mixing bowl fift flour, salt, baking soda, sugar.
b) stir in oatmeal with a fork
c) cut in margarine with pastry blender until like coarse meal
   with few larger pieces
d) add water, a tablespoon at a time, combining with fork as in
   making pastry;
   press dough together into a ball;
   divide into four portions
e) preheat oven to 350 F
   set out baking sheets
f) dust pastry board with oatmeal
   roll out one portion of dough to a 7 inch circle.
   cut into 8 pieces
   place on baking sheet
   dust board with oatmeal before each rolling
   repeat above procedure for each portion.
g) bake in preheated oven for 12 minutes.
h) best served warm
